Why this works

High in protein and energy, but also high in saturated fat and sodium due to lamb, cheese and added salt.

High-quality protein. Lamb shank, eggs and cheddar provide a substantial protein load for muscle repair and satiety.

Calcium source. Cheddar contributes calcium, supporting bone health, though it also adds significant saturated fat.

Sodium concern. Added salt plus salsa and cheese push the sodium content up, so this is not a low-salt dish.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4). Season the lamb shanks with salt and black pepper, then place them in a roasting dish with a spoonful of hot salsa and enough water to create a shallow base.
  2. Cover tightly with foil and cook for 2½ to 3 hours, until the lamb is very tender and pulling away from the bone. Remove the lamb shanks and shred the meat, discarding the bones.
  3. Stir the shredded lamb back through the cooking juices and hot salsa, then spread it evenly in a baking dish.
  4. Make 4 small wells in the lamb mixture and crack an egg into each one.
  5. Scatter the cheddar cheese over the top, season lightly with salt and black pepper, and bake for 12 to 15 minutes, until the egg whites are set and the cheese is bubbling.
  6. Serve hot straight from the dish with the yolks still slightly soft if you like.
