Why this works

A protein-rich, relatively low-carbohydrate dish, but the cheese and added salt make it moderately high in saturated fat and sodium.

High-quality protein. Eggs, cheddar and Greek yoghurt provide complete protein, supporting satiety and muscle maintenance.

Calcium source. Cheddar and Greek yoghurt contribute calcium, which supports bone health.

Sodium note. Hot salsa, cheddar and the added pinch of salt can push sodium up, so this may not suit a low-salt diet.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Spoon the hot salsa into a small baking dish or two ramekins, spreading it into an even layer.
  3. Make two small wells in the salsa and crack the eggs into them.
  4. Season the eggs with salt and black pepper, then scatter the cheddar cheese over and around them.
  5. Bake for 10-12 minutes, until the egg whites are just set and the yolks are still soft or cooked to your liking.
  6. Dollop the Greek yoghurt on top and serve immediately.
