Why this works

A high-protein, savoury salad bowl that is relatively energy-dense and high in saturated fat and salt, mainly from the bacon and coleslaw.

Protein from bacon and yoghurt. Provides a useful amount of protein per serving, supporting satiety and maintenance of muscle mass.

Vitamin C and carotenoids. Red pepper contributes vitamin C and antioxidant compounds, which help support immune function and overall dietary quality.

Salt and saturated fat concern. Bacon and butter contribute most of the sodium and saturated fat, so this dish may be less suitable for those limiting salt or looking after heart health.

Method

  1. Melt the butter in a frying pan over a medium heat.
  2. Add the bacon and cook until crisp and golden, then transfer to a plate and keep the bacon fat in the pan.
  3. Add the red bell pepper to the pan and cook for 2–3 minutes until just softened, then leave to cool slightly.
  4. In a bowl, mix the Greek yoghurt with the coleslaw until evenly coated.
  5. Slice the bacon into strips and add it to the coleslaw mixture along with the cooked red pepper.
  6. Toss everything together and serve straight away in bowls.
