Why this works

High-protein and energy-dense, but also high in saturated fat and sodium, so best enjoyed occasionally rather than as an everyday meal.

High-quality protein. Chicken, bacon and cheese provide a substantial protein hit to support fullness and muscle maintenance.

Calcium source. The cheese contributes useful calcium for bone health, though it also adds significant saturated fat.

Sodium concern. Bacon, cheese and processed margarine can make this dish relatively high in salt, which may be a concern for blood pressure.

Method

  1. Heat a frying pan over medium heat and cook the bacon until crisp, then drain briefly on kitchen paper.
  2. Roughly chop or shred the cooked chicken and mix with most of the cheese and the crispy bacon.
  3. Lay out the bread slices and divide the chicken, bacon and cheese mixture between two slices, then top with the remaining bread to make sandwiches.
  4. Spread the outside of each sandwich with margarine.
  5. Return the sandwiches to the pan and cook for 2–3 minutes on each side, pressing gently, until the bread is golden and the cheese has melted. If needed, cover the pan briefly to help the filling warm through.
  6. Cut in half and serve immediately while hot and gooey.
