Why this works

A savoury, energy-dense breakfast muffin with moderate protein and a relatively high salt and saturated fat content, best suited to occasional consumption.

Protein from eggs, bacon and cheese. Provides a useful protein boost for satiety and muscle repair, though the bacon and cheese also add saturated fat and salt.

Calcium from cheddar and milk. Cheddar and milk contribute calcium for bone health, alongside some phosphorus and B12.

Sodium is relatively high. Bacon and cheddar are the main contributors, so this dish may not suit a low-salt diet.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a muffin tin with margarine.
  2. Cook the bacon in a frying pan until crisp, then chop into small pieces.
  3. In a bowl, whisk the eggs with the milk and melted margarine.
  4. Stir in the self-raising flour, then fold through the bacon and grated cheddar cheese.
  5. Divide the batter between the muffin holes and bake for 15-18 minutes until risen and golden. Cool slightly before serving.
