Why this works
Rich, savoury and protein-dense, but high in saturated fat and sodium, so best enjoyed as an occasional meal rather than an everyday staple.
High-quality protein. Eggs, bacon and cheese provide a substantial amount of protein, which supports satiety and muscle maintenance.
Saturated fat and sodium are notable. Bacon, cream cheese, mozzarella and added salt make this dish relatively high in saturated fat and sodium, which may be less suitable for frequent intake.
Some vitamin C and carotenoids. The red pepper contributes vitamin C and antioxidant plant compounds, though the portion is modest.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and grease a baking dish with butter.
- Cook the bacon in a pan until lightly browned, then add the chopped red bell pepper and cook for 3 minutes.
- Beat the eggs with the cream cheese until smooth, then stir in half the mozzarella.
- Tip the bacon and pepper into the baking dish and pour over the cheese mixture.
- Top with the remaining mozzarella and bake for 20–25 minutes until set and golden.
- Rest for 5 minutes before serving.
