Why this works

Moderate-calorie salad bowl with a useful protein hit, but fairly high in saturated fat from the cheese and yoghurt mix.

Protein from dairy. Mozzarella and Greek yoghurt contribute a decent amount of protein, which helps with satiety and muscle repair.

Vitamin C from orange pepper. The pepper provides vitamin C and antioxidants, supporting immune function and iron absorption.

Saturated fat concern. Greek coconut yoghurt and mozzarella lift the saturated fat content, so this dish is less heart-friendly than a yoghurt-only salad.

Method

  1. Slice the orange pepper into thin strips and add it to a mixing bowl with the coleslaw.
  2. In a separate bowl, whisk together the Greek yoghurt and Greek coconut yoghurt until smooth and creamy.
  3. Fold the yoghurt dressing through the coleslaw and pepper until everything is evenly coated.
  4. Tear or dice the mozzarella cheese and scatter it over the top.
  5. Serve immediately, or chill for 10 minutes if you prefer it extra refreshing.
