Why this works

High-protein, relatively low-carb curry with moderate fat; sodium is fairly high due to added salt.

Lean protein. Chicken breast provides a substantial amount of protein with relatively little saturated fat.

Tomatoes and onion. Tinned tomatoes and onion contribute vitamin C, potassium and antioxidant compounds such as lycopene.

Sodium concern. 1 tsp salt across 4 servings pushes sodium up, so this dish may not suit a low-sodium diet as written.

Method

  1. Dice the onion and cut the chicken breast into bite-sized pieces. Finely chop the garlic and grate the ginger if using.
  2. Heat 1 tbsp plain cooking oil in a large pan over a medium heat. Fry the onion with a pinch of salt for 8 minutes until softened and lightly golden.
  3. Stir in the garlic and ginger, then cook for 1 minute. Add the garam masala and cook for 30 seconds until fragrant.
  4. Add the chicken breast and cook for 4-5 minutes, stirring, until the pieces are lightly coloured on the outside.
  5. Pour in the tinned tomatoes and season with black pepper. Simmer gently for 15 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
  6. Lower the heat and stir the yoghurt in gradually so the sauce stays smooth. Warm through gently for 2 minutes without boiling, then taste and adjust the seasoning with a little more salt if needed.
  7. Serve hot as an Indian-style dinner.
