Why this works

Rich and energy-dense with moderate protein; best enjoyed as an occasional breakfast or brunch rather than a everyday lighter option.

Egg protein. Eggs provide complete protein plus vitamin B12 and selenium, supporting muscle maintenance and normal energy metabolism.

Saturated fat. Butter and coconut yoghurt contribute a relatively high saturated fat content, which may be a consideration for heart health if eaten often.

Low sugar. This is naturally low in sugar compared with sweet breakfast bakes, especially if served without sugary toppings.

Method

  1. Heat the oven to 220°C (Fan 200°C, 428°F, Gas Mark 7) and place a small ovenproof frying pan inside to warm.
  2. Whisk the eggs with the Coconut Greek Yoghurt until smooth, then whisk in the cake flour.
  3. Carefully remove the hot pan and add the butter so it melts immediately.
  4. Pour in the batter and return to the oven at once.
  5. Bake for 12–15 minutes until puffed and golden.
  6. Serve immediately while it is still billowy and hot.
