Why this works

Moderate-energy baked square with some protein from eggs and yoghurt, but fairly high in saturated fat from butter and coconut yoghurt.

Wholegrain cereal base. Weet-Bix contributes wholegrain starch and some fibre, which helps add a little digestive support and slows glucose release compared with refined flour alone.

Protein and micronutrients from eggs. Eggs provide quality protein plus vitamin B12, selenium and choline, which support muscle maintenance and normal cell function.

Higher saturated fat. Butter and coconut yoghurt increase saturated fat, so this is best enjoyed as an occasional treat rather than an everyday staple.

Method

  1. Heat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and line a square tin with baking paper.
  2. Crush the Bokomo Weet-Bix and rub in the butter, then press the mixture firmly into the base of the tin.
  3. Whisk the eggs with the Coconut Greek Yoghurt until smooth, then stir in the cake flour.
  4. Pour the custard mixture over the base.
  5. Bake for 25–30 minutes until the centre is just set.
  6. Cool completely before slicing into squares.
