Why this works

A moderately energy-dense breakfast slice with some protein from eggs and yoghurt, but relatively high in saturated fat and refined carbohydrate.

Eggs provide quality protein and micronutrients. The eggs contribute complete protein, plus nutrients such as vitamin B12, selenium and choline, supporting muscle maintenance and normal nervous system function.

Weet-Bix adds some wholegrain value. The Weet-Bix offers a modest amount of fibre, B vitamins and iron compared with a fully refined bake, although the overall fibre per slice remains low.

Coconut yoghurt and butter raise saturated fat. The coconut yoghurt and butter increase saturated fat, so this recipe is best enjoyed in moderation if you are watching heart health or LDL cholesterol.

Method

  1. Heat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and line a small baking tin with baking paper.
  2. Crush the Bokomo Weet-Bix and mix with the cake flour in a bowl.
  3. Melt the butter and whisk it with the eggs and Coconut Greek Yoghurt until smooth.
  4. Fold the dry ingredients into the wet mixture to form a thick batter.
  5. Spread into the prepared tin and bake for 20–25 minutes until set and lightly golden.
  6. Cool for a few minutes before slicing into squares.
