Why this works

A modestly sized, protein-containing dessert with moderate fat and sugar, but little fibre; best enjoyed in moderation.

Protein from eggs and yoghurt. Eggs and yoghurt contribute quality protein, which helps with satiety and tissue maintenance.

Calcium and B12. Milk and yoghurt provide calcium for bone health, plus vitamin B12 from dairy and eggs.

Low fibre. This custard contains virtually no fibre, so it is not particularly filling from a digestive-health perspective.

Method

  1. Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3) and place a deep roasting tin in the oven.
  2. Warm the milk gently in a saucepan until steaming but not boiling.
  3. In a bowl, whisk the eggs with the yoghurt until smooth, then gradually whisk in the warm milk.
  4. Pour the mixture into four small ramekins and set them in the roasting tin.
  5. Pour enough hot water into the tin to come halfway up the sides of the ramekins.
  6. Bake for 25-30 minutes until just set with a slight wobble in the centre. Serve warm or chilled.
