Why this works

A hearty, protein-rich taco meal that is relatively energy-dense and higher in saturated fat and sodium, mainly from the beef mince, cheese and taco shells.

High-quality protein. Beef mince and cheddar provide a substantial protein hit, supporting satiety and muscle maintenance.

Key minerals. Beef contributes iron and zinc, both important for energy metabolism and immune function.

Vegetable contribution. Tomato, lettuce and onion add vitamin C, folate and some fibre, though the overall vegetable content is modest.

Method

  1. Heat the oil in a frying pan over a medium heat.
  2. Add the onion and cook for 4-5 minutes until softened.
  3. Add the beef mince and cook until browned, breaking it up with a spoon.
  4. Season with salt and black pepper, then add a splash of water if needed to keep it juicy.
  5. Warm the tacos according to the packet instructions.
  6. Fill each taco with the beef, tomato, lettuce and cheddar cheese.
  7. Serve immediately while the shells are crisp and warm.
