Why this works
A rich, energy-dense dessert with moderate protein from eggs, but high in saturated fat and best enjoyed in small portions.
Chocolate polyphenols. Chocolate can provide antioxidant compounds, though the overall dessert remains high in fat and energy.
Egg nutrients. Eggs contribute protein, vitamin B12 and choline, supporting normal cell function and energy metabolism.
Sodium and saturated fat. A small pinch of salt keeps sodium low overall, but butter and chocolate make saturated fat relatively high.
Method
- Preheat the oven to 150°C (Fan 130°C, 302°F, Gas Mark 2) and place four ramekins in a deep roasting tin.
- Pour the tea into a small saucepan and heat until just steaming. Remove from the heat and leave to infuse for 5 minutes, then strain if needed.
- Add the chocolate and butter to the warm tea and stir gently until fully melted and smooth.
- In a bowl, whisk the eggs with a pinch of salt until just combined, then slowly whisk in the chocolate mixture.
- Divide the custard between the ramekins, then pour enough hot water into the roasting tin to come halfway up the sides of the ramekins.
- Bake for 18–22 minutes, until just set with a slight wobble in the centre.
- Remove carefully from the water bath and leave to cool, then chill for at least 2 hours before serving.
