Why this works

A filling, protein-rich hash that is relatively energy-dense and moderate in fat, with a notable salt content from the added salt and stock.

Good protein contribution. Beef mince provides a substantial amount of protein, supporting satiety and muscle maintenance.

Source of iron and B vitamins. Beef and carrots contribute iron, vitamin B12, niacin and vitamin A precursors, which support red blood cell formation and energy metabolism.

Higher sodium concern. Added salt plus beef stock can push sodium up, making this less suitable for those monitoring blood pressure or salt intake.

Method

  1. Peel 700g potatoes and cut them into 2cm cubes. Peel and dice 2 carrots and finely chop 1 onion.
  2. Bring a pan of water to the boil, add the potatoes and simmer for 8 minutes. Drain well and leave to steam dry for 2 minutes.
  3. Heat 1 tbsp plain cooking oil in a large frying pan over a medium-high heat. Fry the potatoes for 10 to 12 minutes, turning occasionally, until lightly golden.
  4. Add the onion and carrots to the pan and cook for 5 minutes until starting to soften.
  5. Add 500g beef mince and cook for 8 to 10 minutes, breaking it up well, until browned.
  6. Pour in 200ml beef stock, season with salt and black pepper, and cook for 8 to 10 minutes, stirring now and then, until the stock has mostly reduced and the hash is rich and savoury.
  7. Press the mixture lightly into the pan and cook for 2 more minutes to crisp the base slightly before serving hot.
