Why this works

Moderate-protein, relatively lower-carbohydrate dish with some saturated fat and a notable salt contribution.

Vitamin C from orange juice and cabbage. Orange juice and red cabbage contribute vitamin C, which supports immune function and helps with iron absorption from the beef.

Iron and zinc from beef. Minced beef provides haem iron and zinc, both important for oxygen transport, energy metabolism and immune health.

Higher sodium from added salt. 1 tsp of salt across 4 servings adds a meaningful sodium load, which may be a concern for blood pressure.

Method

  1. Cook the minced beef in a large frying pan for 5-6 minutes over a medium-high heat until browned.
  2. Add the finely sliced red cabbage and cook for 5 minutes until starting to soften.
  3. Pour in the orange juice and add the chopped herbs, then simmer for 6-7 minutes until the liquid has reduced to a glossy glaze.
  4. Season with salt and black pepper, then stir well and cook for 1 minute more.
  5. Serve hot straight from the pan.
