Why this works

A protein-rich stir-fry with moderate fat and sodium, plus modest fibre from vegetables; best suited as a balanced main when paired with whole grains or extra veg.

High-quality protein. Ground beef provides a substantial amount of protein, supporting muscle maintenance and satiety.

Vitamin C and carotenoids. Peppers are a good source of vitamin C and antioxidants, which support immune function and help with iron absorption from beef.

Sodium from soy sauce. Soy sauce and the added pinch of salt contribute to the sodium content, so this dish may be less suitable for low-salt diets.

Method

  1. Cook the ground beef in a hot frying pan until browned, breaking it up as it cooks.
  2. Add the peppers and peas and stir-fry for 3-4 minutes.
  3. Stir in the soy sauce and mustard with a splash of water, then cook for another 2 minutes until everything is well coated.
  4. Simmer briefly until the sauce clings to the beef and vegetables.
  5. Serve hot on its own or with a side of crispy rounds if desired.
