Why this works

A creamy, dessert-style pot that is relatively high in fat and sugar, with moderate protein from the yoghurt and soft cheese.

Calcium and protein. Greek yoghurt and soft cheese contribute calcium and a modest amount of protein, supporting bone and muscle health.

High saturated fat. Butter, soft cheese and full-fat yoghurt can make this dessert quite high in saturated fat, so portion size matters.

Added sugar and refined carbohydrate. Digestive biscuits and icing sugar raise the sugar and refined carb content, making this less suitable for frequent consumption.

Method

  1. Crush the digestive biscuits into fine crumbs and stir with melted butter until the mixture resembles damp sand.

Aim for crumbs with no large biscuit pieces, then add the butter gradually so the mixture clumps when pinched rather than looking greasy. If it seems oily, it has too much butter and may turn heavy in the glass.

  2. Divide the biscuit mixture between 4 glasses or ramekins and press down lightly to form the base.

Use the back of a spoon or the bottom of a small glass to compact the crumbs just enough that they hold together, but do not tamp them down so firmly that the base becomes hard. Keep the layer even at the edges so each pot has a neat, level foundation.

  3. In a bowl, beat the soft cheese, Greek yoghurt, icing sugar and lemon zest until smooth and creamy.

Beat only until the mixture is silky and lump-free, scraping the sides of the bowl so the lemon zest is evenly dispersed. Stop as soon as it is smooth, as overbeating can loosen the texture and make it less airy.

  4. Spoon the cheesecake mixture over the biscuit bases and smooth the tops.

Spoon the filling in gently to avoid lifting the biscuit layer, then smooth the surface with the back of the spoon or a palette knife for a clean finish. Leave a small gap at the top of each glass so the garnish sits neatly without spilling over.

  5. Chill for at least 30 minutes, then finish with a little extra lemon zest before serving.

Chill until the filling feels properly set to the touch and no longer wobbles loosely in the centre, rather than judging by time alone. Add the final zest just before serving so it stays bright and fragrant instead of drying out in the fridge.
