Why this works
A rich, high-calorie dessert pot with moderate protein, high saturated fat and relatively low fibre, best enjoyed occasionally.
Calcium and protein. Greek yoghurt and cream cheese provide some calcium and protein, though this is offset by the dessert’s higher fat content.
High saturated fat. Cream cheese, butter and digestive biscuits contribute a notable amount of saturated fat, which is higher than ideal for frequent consumption.
Added sugar. Caster sugar, vanilla yoghurt and biscuits increase the sugar content, so portions are worth keeping modest.
Method
- Melt the butter in a small pan over a low heat, then stir in crushed digestive biscuits if using, and divide between 4 small serving pots to form the base.
Keep the heat very low so the butter just melts without sizzling; if it starts to foam, take it off the hob to stop the biscuits turning greasy. Press the crumbs firmly with the back of a spoon so the base looks even and compact rather than loose.
- Beat the cream cheese until smooth, then mix in the Greek yoghurt and vanilla yoghurt until well combined and creamy.
Beat until the cream cheese loses all visible lumps and looks glossy before adding the yoghurts, otherwise the pots can finish with a grainy texture. Scrape down the sides of the bowl so the mixture stays uniformly pale and smooth.
- Stir in caster sugar, vanilla extract and a little lemon juice if using, then taste and adjust the sweetness if needed.
Add the sugar gradually and taste after each small addition, because vanilla yoghurt can vary a lot in sweetness. Use only enough lemon juice to lift the flavour, as too much can thin the filling and make it taste sharp.
- Spoon the cheesecake mixture over the biscuit base and smooth the tops.
Spoon the filling in gently and tap the pots on the worktop once or twice to remove air pockets, which helps the top sit flat. Use the back of a teaspoon or palette knife to leave a neat, level finish at the edges.
- Chill for at least 30 minutes before serving, or longer for a firmer set.
Chill on a level shelf so the filling sets evenly and does not slide to one side. If you want a cleaner spooning texture, leave it until the surface feels firm to a light touch rather than soft in the middle.
