Why this works
A rich, sweet dessert with a useful amount of protein and fruit, but it is relatively high in calories, saturated fat and sugar per serving.
Calcium and protein. Greek yoghurt and soft cheese provide protein and calcium, supporting muscle maintenance and bone health.
Vitamin C and antioxidants. Lemon zest/juice and mixed berries contribute vitamin C and polyphenol antioxidants.
Higher sugar and saturated fat. Honey, digestive biscuits, butter and soft cheese raise the sugar and saturated fat content, so this is best enjoyed as an occasional treat.
Method
- If you want a biscuit-style base, lightly toast the bread until crisp, then crush it finely. Spoon into the bottoms of 4 serving glasses and press down gently.
- In a bowl, whisk the Greek yoghurt with the honey and finely grated lemon zest until smooth and well combined.
- Spoon the yoghurt mixture over the base layer in each glass.
- Toss the fresh berries with a little lemon juice and a drizzle of honey, then spoon them on top of the yoghurt.
- Chill for at least 10 minutes before serving so the flavours meld and the texture firms up slightly.
