Why this works

A moderately energy-dense dish with good protein and fibre, but relatively high in saturated fat from butter and eggs.

Cabbage provides fibre and vitamin C. Cabbage contributes fibre for digestive health, plus vitamin C and some folate to support immune function and normal cell processes.

Eggs add high-quality protein. The eggs supply complete protein, as well as vitamin B12 and selenium, which support energy metabolism and thyroid function.

Butter and eggs increase saturated fat. Most of the saturated fat comes from the butter and egg yolks, so this dish is less suitable for those limiting saturated fat or cholesterol.

Method

  1. Melt the butter in a wide pan and add the cabbage with a splash of water if needed to help it steam.
  2. Cook over a low to medium heat for 15-20 minutes until very tender.
  3. Stir through the yoghurt off the heat so it turns into a light, creamy glaze.
  4. In a separate pan, fry or poach the eggs in a little butter until cooked to your liking.
  5. Serve the eggs over the glazed cabbage.
