Why this works

A filling, protein-rich tray bake with moderate carbohydrates and a higher saturated fat content due to the cheese and butter.

High-quality protein. Chicken provides a substantial amount of complete protein, supporting muscle maintenance and repair.

Beta-carotene from sweet potato. Sweet potato contributes beta-carotene, which the body converts to vitamin A, supporting vision and immune function.

Calcium and saturated fat from cheese. Cheese adds calcium and B12, but also increases saturated fat and overall energy density.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the sweet potato into chunks and place in a large roasting tin.
  3. Add the chicken pieces and dot with butter.
  4. Pour in a small splash of water to help create steam at the start of cooking.
  5. Roast for 35-40 minutes, turning once, until the chicken is cooked through and the sweet potato is tender.
  6. Scatter over the cheese for the final 5 minutes so it melts on top.
  7. Serve straight from the tin.
