Why this works

A hearty, protein-rich stuffed pepper that is high in fat and saturated fat, with moderate calories and relatively low carbohydrate content.

Protein and satiety. Eggs, sausage and cheese provide a substantial protein hit, which may help with fullness and muscle repair.

Vitamin C. The orange pepper contributes vitamin C and carotenoids, supporting immune function and antioxidant intake.

Salt and saturated fat. Cooked sausages, cheddar, mozzarella and added salt make this dish relatively high in sodium and saturated fat.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and lightly butter a small baking dish or tray.

Let the oven fully come up to temperature before the dish goes in so the egg starts setting straight away rather than steaming and turning watery. A thin smear of butter is enough to stop sticking without pooling in the base.

  2. Halve the orange pepper lengthways and remove the seeds and core. Place the pepper halves cut-side up in the dish.

Keep the pepper halves upright and level so the filling stays in place; trim a tiny sliver from the underside only if they wobble. Remove every bit of white pith if you want a sweeter flavour and a softer bite.

  3. Slice the cooked sausages and divide them between the pepper halves.

Slice the sausages on a slight angle for more exposed surface and better browning under the cheese. Tuck the pieces snugly into the pepper so they do not float up when the egg is added.

  4. Crack the eggs into a bowl, season with salt and black pepper, then lightly beat with a fork.

Beat just until the yolk and white are combined and the mixture looks evenly yellow, but stop before it turns foamy. Excess whisking traps air and can make the baked egg puff up then collapse.

  5. Spoon the eggs over the sausage in each pepper half, then scatter over the grated extra mature cheddar and mozzarella.

Pour slowly around the sausage rather than directly on top if you want an even layer with less spillage. Leave a small gap at the top because the egg will rise slightly as it bakes.

  6. Dot the top with a little butter and bake for 18-22 minutes, until the egg is just set and the cheese is melted and golden.

Watch for the cheese to turn patchy gold and the egg to lose its shine at the edges while the centre still has a faint wobble. If the top colours too quickly, loosely cover with foil for the final few minutes.

  7. Leave to rest for 2 minutes before serving hot.

Letting it stand briefly helps the egg finish setting and makes the peppers easier to lift without splitting. Serve as soon as the buttered juices are absorbed so the base does not turn soggy.
