Why this works
A protein-rich, moderate-calorie stuffed pepper with good satiety, but it is relatively high in saturated fat and sodium due to the cheese, butter and added salt.
High-quality protein. Eggs and cottage cheese provide a strong protein contribution, supporting satiety and muscle maintenance.
Vitamin C and carotenoids. The orange pepper adds vitamin C and antioxidant plant compounds, which support immune function and help with iron absorption.
Calcium, but also saturated fat. The cottage cheese and mature cheese contribute calcium, though the extra mature cheese and butter raise saturated fat.
Method
- Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
Use the centre rack so the heat surrounds the dish evenly, and let the oven fully reach temperature before the pepper goes in; a properly preheated oven helps the filling set without turning watery.
- Halve the orange pepper and remove the seeds.
Trim away any loose white pith and avoid puncturing the pepper walls too deeply, as intact halves will hold the filling and soften into a neat shell rather than collapse.
- Mix the eggs with the natural cottage cheese and most of the extra mature cheese.
Beat just until the eggs and cottage cheese are combined, leaving a few curds for a lighter texture; overmixing can make the filling dense and leaden.
- Place the pepper halves in a lightly buttered baking dish and spoon in the filling.
Set the pepper halves upright and, if they wobble, shave a tiny slice from the base rather than forcing them flat, so the filling stays level and does not spill out.
- Top with the remaining cheese and season with salt and black pepper.
Keep the seasoning light at this stage because the mature cheese is already salty, and save a little pepper for the end so its aroma stays bright.
- Bake for 18–20 minutes until the filling is set and the pepper is tender.
Look for the egg mixture to be just set with a slight wobble in the centre and the pepper to yield easily to the tip of a knife; if the cheese browns too quickly, loosely cover with foil.
- Serve warm.
Let them rest briefly so the filling firms up and does not slide out, then serve while the cheese is still warm and glossy.
