Why this works

A sweet, tangy chutney that is low in fat but relatively high in sugar and sodium, so best enjoyed in small portions.

Polyphenols from apples and ginger. Apples and ginger provide antioxidant compounds that may help support overall health, though the quantities per serving are modest.

Potassium and fibre from fruit and onion. Apples, onions and raisins contribute a little fibre and potassium, supporting digestive health and normal muscle function.

Salt and added sugar are notable. The recipe contains both added brown sugar and 1 tsp salt, which raises the sugar and sodium content per serving.

Method

  1. Peel, core and dice the apples, then finely chop the onion and grate the ginger.
  2. Put the apples, onion, raisins, brown sugar, vinegar, ginger, mustard seeds and salt into a saucepan.
  3. Set over a medium heat and stir until the brown sugar has dissolved and the mixture starts to bubble.
  4. Reduce the heat and simmer gently for 30 to 40 minutes, stirring often, until the apples are soft and the chutney has thickened.
  5. Taste and adjust with a little more vinegar or salt if needed.
  6. Spoon into sterilised jars while hot and leave to cool before sealing.
