Why this works

Rich, protein-heavy breakfast with very high fat and saturated fat, and likely high salt from chorizo and cheese.

Protein from eggs and cheese. A good source of complete protein, supporting satiety and muscle maintenance.

High saturated fat. Butter, cheese and chorizo make this dish particularly high in saturated fat, which should be limited within UK healthy eating guidance.

High sodium potential. Chorizo is typically salty, so this recipe is likely high in salt even before any added seasoning.

Method

  1. Slice the chorizo sausages into thin rounds.
  2. Melt the butter in a frying pan over a medium heat and add the chorizo. Cook for 3-4 minutes until the fat renders and the chorizo is lightly crisp.
  3. Crack the eggs into a bowl and beat until just combined.
  4. Reduce the heat to low. Pour in the eggs and stir gently with a spatula, scraping the base of the pan as they begin to set.
  5. When the eggs are nearly cooked but still soft, add the cheese and fold through until just melted.
  6. Serve straight away while the eggs are creamy and the chorizo is hot.
