Why this works

Protein-rich and very energy-dense, but high in saturated fat and sodium due to the chorizo, cheese and added salt.

High-quality protein. Eggs and cheese provide a substantial amount of complete protein, supporting muscle maintenance and satiety.

Saturated fat and salt. Chorizo, cheese and added salt make this dish relatively high in saturated fat and sodium, which may be a concern if eaten often.

Micronutrients. Eggs contribute vitamin B12 and vitamin D, while cheese adds calcium and phosphorus.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Butter two small ovenproof dishes or ramekins.
  3. Slice the chorizo sausages and divide them between the dishes. Scatter over the cheese.
  4. Crack 2 eggs into each dish, keeping the yolks intact.
  5. Season lightly with salt and black pepper, then bake for 10–14 minutes until the whites are set and the yolks are cooked to your liking.
  6. Serve immediately while hot.
