Why this works

A hearty, energy-dense traybake that is relatively high in saturated fat and sodium, with moderate fibre from the potatoes and onions.

Potassium and vitamin C. Potatoes and onions provide some potassium, with potatoes also contributing vitamin C, though some is lost during cooking.

Sodium and saturated fat. Chorizo and added salt make this dish relatively high in sodium, while chorizo and butter contribute a high saturated fat content.

Fibre content. The potatoes and onions offer a moderate amount of fibre, which is helpful for digestive health and fullness.

Method

  1. Heat the oven to 210°C (Fan 190°C, 410°F, Gas Mark 6).
  2. Cut the potatoes into bite-sized chunks and slice the onions.
  3. Toss the potatoes and onions with melted butter, salt and black pepper in a roasting tin.
  4. Roast for 25 minutes, then add the chorizo slices and turn everything well.
  5. Roast for another 15-20 minutes until the potatoes are crisp and the onions are caramelised.
  6. Serve hot from the tray.
