Why this works

A savoury, protein-containing breakfast hash that is fairly energy-dense and likely high in salt, with modest carbohydrate and fibre.

Protein from sausages. Provides a useful amount of protein, but also brings more saturated fat and sodium than leaner breakfast options.

Vitamin C and lycopene. Tomatoes contribute vitamin C and the antioxidant lycopene, supporting immune and general health.

Low fibre content. Mushrooms and tomatoes add some fibre, but the dish remains relatively low in fibre overall.

Method

  1. Slice the cooked sausages and halve the tomatoes.
  2. Melt the margarine in a frying pan over a medium heat.
  3. Add the mushrooms and cook for 4-5 minutes until softened.
  4. Stir in the sausages and tomatoes, then cook until everything is piping hot.
  5. Season with salt and black pepper and serve straight away.
