Why this works

Moderate-protein savoury dish with useful vegetables, but relatively high in fat and sodium due to the sausages and added salt.

Mushrooms. Provide B vitamins, selenium and some potassium, with a modest fibre contribution for gut health.

Tomatoes and lemon. Add vitamin C and antioxidant compounds such as lycopene, supporting immune and cardiovascular health.

Sausages and salt. Likely the main source of saturated fat and sodium, so this dish may not suit a low-salt or heart-healthy plan if made as written.

Method

  1. Slice the cooked sausages into thick pieces.
  2. Heat a dry frying pan over a medium heat and add the sausages and mushrooms.
  3. Cook for 4-5 minutes until the mushrooms soften and the sausages are hot through.
  4. Add the tomatoes and cook for another 3-4 minutes until they begin to collapse.
  5. Season with salt and black pepper, then finish with a squeeze of lemon.
  6. Serve straight away while hot.
