Why this works
An indulgent, energy-dense dessert with moderate protein and relatively low carbohydrate, but high in saturated fat and sugar per portion.
Dark chocolate antioxidants. Dark chocolate contributes flavanols and some iron and magnesium, though benefits depend on cocoa content.
Calcium and iodine from dairy. Butter and yoghurt provide small amounts of calcium, and the yoghurt adds some protein and live cultures if unpasteurised cultures are present.
High saturated fat. Butter and chocolate make this dessert high in saturated fat, so it is best enjoyed occasionally.
Method
- Finely chop the chocolate and put it in a heatproof bowl with the butter and salt.
- Melt the chocolate and butter together over a pan of gently simmering water, stirring until smooth, then set aside to cool slightly.
- Separate the eggs, placing the yolks in one bowl and the whites in another.
- Beat the egg yolks into the melted chocolate mixture until glossy and smooth.
- Whisk the egg whites until they form soft peaks, then fold them gently into the chocolate mixture to keep it light.
- Spoon the mixture into 4 small pots or glasses and chill for at least 2 hours, until set but still soft.
- Stir the yoghurt briefly until smooth, then spoon a little on top of each pot to serve.
