Why this works

An indulgent, energy-dense dessert that is relatively low in sodium but high in saturated fat and sugar.

Chocolate provides antioxidants. Chocolate contributes polyphenols, but the overall dessert remains high in sugar and fat.

Eggs add protein and micronutrients. Eggs contribute protein, vitamin B12 and selenium, supporting the dish’s nutrient density.

Saturated fat is notable. Butter and chocolate make this dessert high in saturated fat, so it is best enjoyed occasionally.

Method

  1. Melt the chocolate and butter together slowly until smooth.
  2. Whisk the eggs until pale and slightly thickened.
  3. Fold the melted chocolate into the eggs in a steady stream, then stir in most of the yoghurt.
  4. Spoon into glasses and top with a little extra yoghurt swirled through the surface.
  5. Chill for at least 1 hour before serving.
