Why this works

A rich, energy-dense dessert with moderate protein from eggs but high saturated fat from chocolate and butter.

Egg protein and micronutrients. Eggs contribute quality protein plus vitamin B12, selenium and choline, supporting muscle maintenance and normal nervous system function.

High saturated fat. Butter and chocolate make this dish high in saturated fat, which should be limited within a balanced UK diet.

Low fibre and modest sugar. This recipe is relatively low in fibre, and most carbohydrates come from sugar rather than whole-grain ingredients.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4).
  2. Melt the chocolate and butter together gently in a bowl over simmering water.
  3. Whisk in the eggs one at a time until smooth and glossy.
  4. Stir in a small pinch of salt.
  5. Divide the mixture between greased ramekins or small tins.
  6. Bake for 10 to 12 minutes until just set at the edges but still soft in the middle. Serve warm or chilled.
