Why this works
A light, vegetable-based side with good fibre and relatively low energy, though the added oil and salt raise the fat and sodium content.
High in fibre. Cabbage and carrots provide fibre, which supports bowel regularity and helps increase fullness.
Vitamin C source. Cabbage and lemon contribute vitamin C, supporting immune function and iron absorption.
Watch the salt. Half a teaspoon of salt across 2 servings makes this a relatively sodium-containing dish, especially if paired with other salty foods.
Method
- Heat the oven to 220°C (Fan 200°C, 428°F, Gas Mark 7). Cut the cabbage into thick wedges and place on a baking tray.
- Brush with oil and roast for 18-20 minutes until the edges are caramelised.
- Meanwhile, grate the carrots finely and mix with lemon juice, a little oil, salt and black pepper if using.
- Spoon the carrot and lemon dressing over the hot cabbage wedges and serve immediately.
