Why this works

A light, vegetable-based side dish that is relatively low in calories and saturated fat, with good fibre and vitamin content, though the added salt makes the sodium moderate to high.

High in vitamin C. Cabbage and lemon contribute vitamin C, which supports immune function and helps with iron absorption.

Good source of fibre. Cabbage, green beans and carrots provide fibre, supporting digestive health and helping with fullness.

Watch the sodium. Half a teaspoon of salt across two servings pushes the sodium up, so this dish is less suitable for low-sodium diets unless reduced.

Method

  1. Thinly shred the cabbage, trim the green beans, and slice the carrots into ribbons or matchsticks.
  2. Blanch the green beans for 2-3 minutes in boiling water, then drain.
  3. Lightly soften the cabbage and carrots in a hot pan with a little oil for 3-4 minutes, keeping some crunch.
  4. Add the green beans, lemon juice, salt and black pepper if using, then toss and serve warm.
