Why this works

A light, vegetable-based side dish that is fibre-rich and low in protein, but the added oil and salt raise the fat and sodium content.

High in vitamin C. Cabbage, green pepper and lemon all contribute vitamin C, which supports immune function and helps with iron absorption.

Source of beta-carotene. Carrots provide beta-carotene, a precursor to vitamin A important for vision and skin health.

Sodium concern. 1 tsp of added salt makes this dish relatively high in sodium per serving, which may not suit a low-salt diet.

Method

  1. Slice the cabbage thinly, cut the carrots into matchsticks, and slice the green pepper.
  2. Heat oil in a large frying pan or wok over a high heat.
  3. Stir-fry the carrots and pepper for 2 minutes, then add the cabbage and continue cooking for 4-5 minutes until just tender.
  4. Add lemon juice and a little salt, toss well, and serve immediately.
