Why this works

A protein-rich, very low-carbohydrate breakfast that is also high in saturated fat and sodium due to the chorizo and cheese.

High-quality protein. Eggs and cheese provide a substantial protein hit per serving, supporting satiety and muscle maintenance.

High in saturated fat. Chorizo and cheese contribute a large amount of saturated fat, so this is best eaten occasionally rather than daily.

Sodium concern. Chorizo, cheese and added salt can push sodium quite high, which may be an issue for blood pressure management.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Slice the chorizo sausages and fry them in a dry pan for 3-4 minutes until they release their oil and start to crisp.
  3. Divide the chorizo between 4 lightly greased muffin holes or small ovenproof ramekins.
  4. Crack an egg into each one, then season lightly with salt and black pepper if using.
  5. Scatter the cheese over the top of each egg cup.
  6. Bake for 10-12 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  7. Leave to stand for 2 minutes before serving hot.
