Why this works

A high-energy, indulgent breakfast with decent protein but also notable saturated fat and sugar from the peanut butter, jam and butter.

Protein from eggs, milk and peanut butter. Provides a moderate amount of protein to support satiety and muscle maintenance.

Source of vitamin E and healthy fats. Peanut butter contributes vitamin E, niacin and unsaturated fats, though the overall fat content is high due to butter.

Higher sugar and saturated fat content. Jam, butter and bread increase free sugars and saturated fat, so this is best enjoyed as an occasional treat.

Method

  1. Beat the eggs with the low fat milk in a shallow bowl.
  2. Spread peanut butter on two slices of bread and jam on the other two slices, then sandwich them together. If using softer bread, press gently to seal.
  3. Dip each sandwich into the egg mixture, turning so both sides are coated.
  4. Melt the butter in a frying pan over a medium heat and cook the sandwiches for 2–3 minutes on each side until golden and crisp.
  5. Serve warm straight from the pan.
