Why this works

A moderately high-calorie sweet pancake dish, providing some protein from eggs and milk but also relatively high refined carbohydrate, sugar and saturated fat.

Eggs provide protein and micronutrients. Eggs contribute complete protein, plus vitamin B12, selenium and choline, which support energy metabolism and normal nervous system function.

Calcium from milk. The milk adds calcium and some iodine, supporting bone health and thyroid function, though the overall dish remains relatively low in fibre.

Jam and butter increase sugar and saturated fat. Most of the free sugar comes from the jam, while butter raises saturated fat, making this more of an occasional treat than an everyday breakfast.

Method

  1. In a bowl, whisk the eggs with the low fat milk.
  2. Gradually whisk in the flour until you have a smooth batter. Rest it for 5 minutes if possible.
  3. Melt a little butter in a frying pan over a medium heat.
  4. Pour in a small ladle of batter and cook until bubbles appear, then flip and cook the other side until golden.
  5. Serve with the remaining butter and warm jam spooned over the top.
