Why this works

A rich, very low-carb, high-fat dish with a moderate protein content and a relatively high sodium level, mainly from mayonnaise, pickles and Parmesan.

High-quality protein. Eggs and Parmesan provide complete protein, supporting satiety and muscle maintenance.

Sodium load. Pickles, mayonnaise and Parmesan can make this dish quite salty, so it may not suit people limiting sodium.

Saturated fat. Butter, mayonnaise and Parmesan contribute a meaningful amount of saturated fat.

Method

  1. Hard-boil the eggs for 9–10 minutes, then cool, peel and slice.
  2. Mix the mayonnaise and mustard together.
  3. Stir in the chopped pickles and a little grated Parmesan.
  4. Warm the buns lightly in butter if using.
  5. Assemble the burgers with the egg slices and spoon over the pickle-Parmesan dressing.
  6. Serve immediately.
