Why this works
A protein-rich, low-carbohydrate savoury tart filling, but relatively high in saturated fat and salt from the Parmesan and butter.
High-quality protein. Eggs, Parmesan and yoghurt provide a useful amount of complete protein for satiety and muscle maintenance.
Calcium. Parmesan and yoghurt contribute calcium for bone health, though Parmesan also raises salt and saturated fat.
Salt and saturated fat. Parmesan and butter are the main contributors, so this is less suitable as an everyday heart-healthy option if eaten in large portions.
Method
- Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a tart tin with butter.
- Whisk the eggs with yoghurt and mustard, then stir in the grated Parmesan.
- Pour the mixture into the tart tin and bake for 20–25 minutes, until just set and golden on top.
- Leave to stand for a few minutes before slicing and serving.
