Why this works
A very low-carb, protein-rich savoury muffin with moderate calories, but relatively high saturated fat and sodium from the Parmesan.
Protein-rich. Parmesan, yoghurt and eggs provide a useful amount of protein per serving, which can support satiety and muscle maintenance.
Calcium and phosphorus. Parmesan and yoghurt contribute calcium and phosphorus, both important for bone health.
Sodium caution. Parmesan is naturally salty, so the sodium content is likely to be relatively high for a small portion.
Method
- Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4). Grease a 12-hole muffin tin with a little butter.
- Whisk the eggs and yoghurt together until smooth, then stir in the grated Parmesan.
- Melt the butter and stir it into the mixture.
- Spoon the batter into the muffin tin and bake for 18–20 minutes, until risen and lightly golden.
- Leave to cool for a few minutes before serving warm.
