Why this works

A protein-rich, very low-carbohydrate baked omelette that is filling but relatively high in saturated fat and sodium due to the ham and cheese.

High-quality protein. Eggs, ham and mozzarella provide a substantial amount of complete protein, supporting satiety and muscle maintenance.

Calcium and B12. Mozzarella and eggs contribute calcium, vitamin B12 and other nutrients important for bone health and red blood cell formation.

Sodium concern. Cooked ham and added salt can push sodium up, so this dish may not suit those needing a lower-salt diet.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Whisk the eggs with Greek yoghurt, salt and black pepper until airy.
  3. Fold in the chopped ham and torn mozzarella.
  4. Pour into a lightly greased ovenproof dish and smooth the top.
  5. Bake for 14-16 minutes until puffed and just set.
  6. Rest briefly, then slice and serve warm.
