Why this works

High in protein and very low in carbohydrate, but relatively high in saturated fat and sodium due to the ham, cheese and added salt.

Protein-rich. Eggs, ham, Greek yoghurt and mozzarella provide a substantial amount of protein for satiety and muscle maintenance.

Calcium source. Mozzarella and Greek yoghurt contribute calcium, which supports bone health.

Sodium concern. Cooked ham plus added salt make this dish relatively high in sodium, which may be less suitable for those watching blood pressure.

Method

  1. Whisk the eggs with the Greek yoghurt, a pinch of salt and black pepper until smooth.
  2. Melt a little margarine in a non-stick frying pan over a medium heat.
  3. Pour in a thin layer of the egg mixture and tilt the pan so it coats the base like a crêpe; cook until just set, then turn and cook the other side briefly.
  4. Repeat with the remaining mixture to make 4 thin egg crêpes, adding a little more margarine as needed.
  5. Lay the cooked crêpes flat and top each with slices of cooked ham and grated or torn mozzarella.
  6. Fold the crêpes over the filling, return them to the pan for 1-2 minutes, and cook until the mozzarella is melted and the filling is hot.
  7. Serve straight away with a little extra black pepper over the top.
