Why this works

A protein-rich, savoury breakfast bite that is relatively energy-dense and high in saturated fat and salt due to the cheese and chorizo.

Protein from eggs, cheese and chorizo. Provides a useful amount of complete protein per serving, supporting fullness and muscle maintenance.

Calcium from cheddar. Cheddar contributes calcium, which supports bone health, although it also adds saturated fat.

Salt and saturated fat concern. Chorizo and cheddar both raise sodium and saturated fat, so this is best enjoyed occasionally rather than as an everyday choice.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a 6-hole muffin tin.
  2. Slice the chorizo sausages into small pieces and divide evenly between the muffin holes.
  3. In a bowl, whisk together the eggs and milk until well combined, then season if desired.
  4. Stir in most of the cheese, then pour the mixture evenly over the chorizo.
  5. Sprinkle the remaining cheese on top and bake for 18–20 minutes, until set and lightly golden.
  6. Leave to cool for a few minutes before removing from the tin and serving warm.
