Why this works

A light, vegetable-based stew that is relatively low in calories and saturated fat, but the added salt makes it moderately high in sodium.

Vitamin C rich. Tomatoes, green pepper and lemon all contribute vitamin C, which supports immune function and helps with iron absorption.

Antioxidants. Tomatoes provide lycopene and other antioxidants, which are associated with cardiovascular health.

Sodium concern. Half a teaspoon of salt across 2 servings raises the sodium content, which may be high for those watching blood pressure.

Method

  1. Slice the green pepper and chop the tomatoes.
  2. Heat oil in a saucepan, then cook the pepper for 3-4 minutes until it starts to soften.
  3. Add the tomatoes and simmer for 10-12 minutes until they break down into a stew.
  4. Stir in lemon juice and season to taste, then serve hot.
