Why this works
A moderately energetic, protein-containing dish with some vitamin C from pepper, but sodium can be high depending on the salsa and added salt.
Vitamin C. Red pepper provides vitamin C and carotenoids, supporting immune function and antioxidant intake.
Protein and choline. Eggs supply high-quality protein plus choline, which is important for brain and liver health.
Sodium caution. Hot salsa dip and added salt can push sodium up quickly, so the dish may not suit a low-sodium plan.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
Let the oven fully come up to temperature before the dish goes in so the eggs start setting straight away rather than sitting in a lukewarm oven and turning watery.
- Slice the red bell pepper and soften it in a buttered small ovenproof skillet for 4-5 minutes.
Keep the pepper on a medium heat and stir occasionally until it softens and the edges just begin to lose their raw crunch; if the butter starts browning too quickly, lower the heat to avoid a bitter flavour.
- Stir in the hot salsa dip and warm through for 1 minute.
Stir only until the salsa looks glossy and steaming, not bubbling hard, as a fierce heat can split the sauce and make it reduce too far.
- Make two or four small hollows in the sauce and crack in the eggs.
Use the back of a spoon to create deep enough hollows that the whites stay separate, and crack each egg into a small cup first so any shell can be removed before it reaches the pan.
- Bake for 10-12 minutes until the whites are set and the yolks are cooked to your liking.
Check a minute early if you prefer a runny yolk: the whites should be opaque with no translucent patches, while the yolks will still wobble slightly if they are not fully set.
- Serve immediately.
Serve the eggs at once so the residual heat does not overcook the yolks, and season at the table if needed rather than before baking to keep the salt level balanced.
