Why this works

A moderately energy-dense, protein-containing dish with relatively low carbohydrate and sugar, but it is higher in saturated fat from butter and eggs than a lighter everyday meal.

Tomatoes provide lycopene and vitamin C. Passata is a good source of lycopene, an antioxidant linked with tomato dishes, and contributes some vitamin C and potassium.

Eggs add high-quality protein and micronutrients. Eggs provide complete protein, vitamin B12 and selenium, supporting muscle maintenance and energy metabolism.

Contains some saturated fat. Butter and egg yolks raise saturated fat, so portion size may matter if you are watching heart health.

Method

  1. Melt the butter in a frying pan and warm the tomato passata until gently simmering.
  2. Spoon in the yoghurt and stir until the sauce looks smooth and lightly creamy.
  3. Make four small wells in the sauce and crack in the eggs.
  4. Cover the pan and cook for 5–7 minutes, until the egg whites are set to your liking.
  5. Serve hot straight from the pan.
