Why this works
A rich, protein-containing egg bake that is relatively low in carbohydrate but high in saturated fat and sodium due to the cream cheese and butter.
Vitamin C. The orange pepper provides a meaningful dose of vitamin C and carotenoids, supporting immune function and antioxidant intake.
Protein and choline. Eggs contribute high-quality protein and choline, which are important for muscle maintenance and normal cell function.
Saturated fat and sodium. Philadelphia Garlic & Herbs and butter increase saturated fat and sodium, so this is best enjoyed in moderation if heart health is a priority.
Method
- Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
Wait until the oven has fully reached temperature before the dish goes in, so the eggs start setting evenly rather than slowly warming and overcooking at the edges.
- Lightly butter a small baking dish with the butter.
Use a thin, even smear rather than thick patches, and make sure the corners are coated as well so the bake releases cleanly instead of sticking.
- Halve the orange pepper, remove the seeds, then cut it into thin strips and arrange in the dish.
Slice the pepper into narrow, even strips so it softens at the same rate; any bulky pieces can stay firm and make the top uneven.
- Dollop the Philadelphia Garlic & Herbs over the pepper, then crack the eggs on top.
Leave a little space between the dollops and aim for the eggs to sit in natural gaps, so the whites can spread without running over the cheese too much.
- Bake for 12-15 minutes, until the egg whites are set but the yolks are still a little soft.
Look for opaque whites around the edges with only a slight wobble in the centre; if the yolks are still moving freely, give it another minute or two.
- Serve hot, with the melted herby cheese spooned over the pepper and eggs.
Spoon up some of the melted cheese from the dish while serving, because it will thicken quickly as it cools and cling less well to the eggs.
