Why this works

A moderate-calorie toast topping with some fibre from mushrooms and bread, but relatively low in protein and not especially low in carbohydrate.

Mushrooms provide micronutrients. Mushrooms contribute potassium, selenium and some B vitamins, supporting normal muscle and energy metabolism.

Garlic and parsley add phytonutrients. Garlic and parsley supply small amounts of antioxidants and flavour without adding much sugar or sodium.

Watch the bread and creamer. Most of the carbohydrates come from the bread, while the non-dairy creamer may add extra saturated fat depending on the brand.

Method

  1. Toast the bread until crisp and golden.
  2. Warm the olive oil in a frying pan and cook the mushrooms until they release their moisture and begin to brown.
  3. Add the garlic and cook for 1 minute, then stir in the non-dairy creamer and black pepper.
  4. Simmer briefly until the sauce lightly coats the mushrooms, then spoon over the toast and finish with parsley if using.
